Never Flat Chocolate Chip Cookies
2 ¼ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon baking powder
1/2 teaspoon salt
1 cup butter (2 sticks), softened
¾ cup granulated sugar
¾ cup packed brown sugar
1 tablespoon vanilla extract
2 large eggs
2 cups (or 1 12-oz package) semisweet chocolate chips
Preheat oven to 375 and line a rimmed baking sheet with parchment paper.
Combine flour, baking soda, baking powder, and salt in a small bowl, and set aside.
With an electric mixer, beat butter granulated sugar, brown sugar, and vanilla on medium-high speed until creamy, scraping down the side occasionally (about 4 minutes). Add eggs, one at a time, beating well after each addition. Gradually add the flour mixture, while the mixer is on low. Stir in chocolate chips. Cover bowl with plastic wrap and refrigerate for 1 hour or overnight.
When ready to bake: Drop by rounded tablespoon onto prepared baking sheets. Bake for 9 to 11 minutes on the center rack or until golden brown. Let cookies cool on baking sheets for 1 minute then remove to wire racks to cool completely.
Makes about 5 dozen cookies.
